The farm
20km from Bordeaux, the organic garden of Les Récoltants. Where vegetables patiently wait for the perfect moment for their harvest. From the gardener's hand to the chef's, we create the menu that highlights the flavors of nature.

Tabanac — Entre-deux-Mers — 20 km from Bordeaux
Our farm is located on a rich clay terroir that gives flavor to our vegetables.
At the farm
Our practices are inspired by agroecology and respect for living things.
François, a peasant market gardener, works with nature, not against it: living soils, crop rotations, peasant seeds, preservation of biodiversity... Every gesture aims to nourish the earth as much as our plates, for sustainable agriculture respectful of living things.
Here, the soil is clay-loam. It naturally retains water and preserves minerals.
This terroir, generous by nature, better resists droughts and fully supports our approach: cultivating in a 100% natural way, respecting the soils and working with what they have most precious.
The terroir
The vegetables
About sixty varieties are grown throughout the year, favoring heirloom varieties.
This natural diversity allows us to preserve authentic and rich flavors, far from standardized norms.

Our producers
Working with producers & respecting life
Peasant & local farming
We defend a demanding vision of agriculture, peasant, local and human, respectful of the environment, of life and traditional know-how.
Limousin cows, Gascon pigs, Pyrenean goats, Galeuse d'Eysines squash, Carentan leek, Reinette Clochard apple, Bourbonne gherkin... We work for the promotion of local animal breeds and heirloom varieties threatened by standardization.
Heritage breeds & varieties
Fair compensation
It is essential for us that the producers we work with are fairly and sustainably compensated. We ensure that the price of products is balanced and consistent for everyone: producers, customers and restaurant.
